That’s quite a bold move to bottle such a young eau-de-vie at cask strength, but that’s the choice Authentic Spirits made with this 4yo Grande Champagne (2019-2024).
Colour: Hay, pale gold lights. Irregular heavy tears.
Nose: Fresh candied notes at first. Full of arlequin sweets notes, young grape, fresh honey. This baby cognac owns a nice character, quite sharp but you can anticipate that the texture will be thick. Candied lemon notes. Fresh pear.
Palate: High kick in my palate with this dangerous ABV. I think that’s the limit, further wouldn’t be tastable. Very fresh and vivid profile. Honeysuckle, basil, white pepper. Take me for a fool (or not), but I can easily imagine a pairing with a creamy fish recipe. Precise, fresh, aromatic.
Last Notes: It remains very zesty with air. Bergamot sweets. Fresh cereal notes. A bit Waterford-like indeed. Breakfast tea notes in the background.
Precise, it feels like what it is. Promising kind of Grande Champagne. Very close to Grosperrin Cepages perfection for that kind of young GC in my humble opinion.
