At first, I created this website (Hors d’Age) for cognac tasting notes. All types of cognac. The Grande and the Petite Champagne, the Borderies, the Fins Bois, the Bons Bois and the Bois Ordinaires. Few kilometers away from Angoulême to La Rochelle. From the 19th century to nowadays !

Then, I discovered that cognac requires a lot of time and that’s why we have to appreciate it as a testimony of the past. But cognac is changing. The production methods aren’t the same as thirty years ago. The environmental consciousness isn’t the same too. That’s why this famous eau-de-vie has so much things to amazed us.

Writing cognac tasting notes is a way to pay a tribute to all the work done by the producers. Is there something more important than thanking the people who bring this beautiful nectar ?

In conclusion, that’s why I decided to create this website. To show the real complexity of cognac, all its typicality, whatever the brand. It could be a bottle of Delamain, Martell, Grosperrin or Hine, it doesn’t matter. It’s all about the product. When the cognac is poured into the glass, there is no more brand, no more price. It’s you, your eyes, your nose and your palate.
