This Cave Saint Seurin selection is quite the same age as the Doussoux X.O N°89 previously reviewed, but this time something bottled at a higher ABV. Let’s go! 

Colour: Very dark amber, orange lights. Regular heavy tears. 

Nose: Fresh notes of cedar wood and menthol at first, which is quite surprising. A dark nose on chocolate and tobacco leaves. Full of heady citruses notes on orange blossom and tangerine peel. Strong roasted scents on coffee beans and dark chocolate. 

Palate: Same texture as the OB X.O, very oily. Stunning herbal rancio. Intoxicated eucalyptus and mentholated aromas. 48ish sounds like the perfect ABV here. It evolves on funky fruity aromas like rotten peaches and mango juice notes. I really like this original palate. Nice freshness in the aftertaste, something like liquid parsley or cooked bay leaves. 

Last Notes: Still very heady on citruses notes but darker than previously perceived. Back on the palate, you still find wild rancio on tinned plums and roasted chestnut aromas. You also get a subtle spiciness on Sichuan pepper (still a kind of freshness) and cardamom. Hints of herbal infusion too. 

I particularly like this profile. Wild, consistent, and evolving through the tasting. Very nice selection by Les Caves Saint-Seurin.
