After a first Cognac Sponge on H.A, it’s time to taste another funny labeled cognac from Decadent Drinks. This one is an assemblage of 5 different casks of Fins Bois cognacs distilled in 1968. They come from the small town of Vars, few kilometers north of Angoulême. It has been selected in Grosperrin’s cellars. Here is the Cognac Sponge Héritage No.68!

Colour: Dark gold, green lights. Heavy regular tears.

Nose: Very rum-like nose. Caramelized bananas, brown sugar, sugarcane. So rum-like that you could easily take it for something else than cognac. Something between a Foursquare and a Worthy Park. Pastry notes, banana stew, vivid herbal notes on pinesap. Great freshness on lemon zest, peppermint, and white pepper. Few raisins scents in the background remind you that you’re closer to Angoulême than Kingston. Quite honeyed. Overripe melon notes with a bit of air. A little spiciness on nutmeg too.

Palate: Syrupy/oily texture. Bang! Cherry syrup, roasted pineapples, flambéed apples. Magnificent. Bodybuilt fruitiness on mango juice and apricots jam. Incredible mouth length provided by the uncognac-y ABV (55,4%). Madagascar vanilla. Orange blossom. A subtle aftertaste on floral and spicy aromas. Still very honeyed. Cherry jam, quince jam. Quince liquor. Delicious sugariness counterbalanced by a great freshness on yeast and cereal notes. In fact, it has some malt sides too, a sherry bomb for sure with its fig/quince jam and honeyed aromas.

Last Notes: Great evolution through the tasting. It has some chocolate notes with more air, something like cocoa powder and bitter chocolate. Still very rum-like nose. Still a great herbal freshness pinesap, mint leaves, and candied citruses underlined by nice anise scents. A tad of earthiness too (dry dusty soil). On the palate, it goes on licorice sweets and tinned plums. Nice acidity on linseed oil in the aftertaste. It ends on white pepper, pear juice, and great shades of anise, as an answer to the nose.

A little lack of something to reach 89 but that’s a generous one. Massive Fins Bois fruitiness combined with a nice herbal freshness. Under the cobblestones, the Sponge!
