Another calvados from Dupont on Hors d’Age. after a first one from Cadenhead’s. This 30yo Pays d’Auge calvados from Dupont has 2 versions, one reduced at 41%, and the one I’ll try today, unreduced and bottled at 50%. 

Colour: Mahogany, orange lights. Irregular heavy tears.

Nose: High-ester apple scents at first. Vibrant perfume of over-cooked apple and cider-apple tank smells. Nice amount of oak, reasonable as it seems. Caramelized pears notes then. A tad of leathery notes. A little of milk chocolate shades too.

Palate: Oily texture, dry aftertaste. Caramelized apple notes fighting with a light freshness on peppermint and white pepper. A tad of round tinned quinces tones. Nice herbal aromas on parsley and cooked thyme. Nice mouth length but I miss a bit of depth with this palate. Wormwood rustic notes and hints of rancio in the aftertaste.

Last Notes: Heady orange blossom smells. Light cocoa powder scents too. Obvious lingering cider apple notes. Back on the palate, you find a nice spiciness on gingerbread and nutmeg powder. Caramelized apple for another comeback. It ends on dry walnuts and overripe pears.

Standard 30 yo Pays d’Auge Calvados. Nothing wrong but nothing that much surprising too. I was wondering if it could go further the apple spectrum, but as I said, I miss a bit of depth with this one. Relevant ABV by the way.
