Fine “Young” Calvados

A non-cognac thing today, with a 18yo Pays d’Auge (double-distilled) calvados. I’ve read some stunning reviews about Adrien Camut, and I tasted the Rarete cuvee in a Michelin-star restaurant (and loved it), so I’m obviously very curious about that one.

Colour: Orange, gold lights. Regular medium tears.

Nose: Balsamic notes with cider shades at first. Delicate nose, as you get a subtle mix of fresh apple stew and bread dough. Lingering yeasty note indeed. Hints of floral tones, mainly on rosewater. Very refined for a 20yo Calvados, when most of the time you get a random apple-ish wood plank. 

Palate: I was expecting something thick, but the texture is a little oily and remains quite light. Quite tea-ish at first, mainly on green tea. Hints of vine peach notes and mint leaf then. Lingering over-cooked apple aromas. Surprisingly fresh. White pepper and licorice stick notes in the background. 

Last Notes: I kinda like this clean nose on fresh apple juice and virgin olive oil. Hints of fry heathery scents, those that can be found in some kind of Borderies cognacs. Light honeyed shades. The palate is a bit dryer than previoulsy perceived. It ends on marzipan and pear eau-de-vie.

Clean and a bit exotic, this 18yo Calvados is a refined spirits, far from other apple-based things that you can often try. Hope I’ll taste older Adrien Camut soon.
